Red Cabbage

Ingredients:
2 small red Spanish onions (or 1 large one)
2 red skinned apples
2 tablespoons brown sugar
100g butter
½ head finely red cabbage
1 tablespoon balsamic vinegar or ½ tablespoon red wine vinegar
½ cup red wine

Method:
Melt the butter and place the Spanish onions, apples brown sugar into a saucepan and cook slowly until the onions are well caramelised.
Finely shred the red cabbage, add the balsamic vinegar and red wine.
Put a lid on the saucepan and simmer between 1 and 2 hours.
Mix the onion mixture with the cabbage mixture and cook for a further 15 mintues.
