Tuna with Rice
Ingredients:
Cook 1 cup of rice with onion – see recipe
1 large tin of Chunky Tuna in saline, drained
1 tin of corn, washed and drained
1 clove of garlic, crushed
1 large carrot grated
1 stick of celery, finely chopped
˝ green pepper, finely diced
˝ red pepper, finely diced
3 shallots, finely sliced
Large bunch of parsley, finely chopped
Salt and pepper
Lemon juice
Method:
Onion Rice
1 cup rice
2 cups water
30g butter or oil
1 small onion, finely chopped
Salt and pepper to taste.
2 vegetable stock cubes
Heat the butter or oil, add the onion and cook gently for a few minutes, until it becomes golden brown, add the rice and toast for a few minutes.
Add the water, salt and pepper to taste. Bring to the boil, cover pan and simmer gently for 20 minutes.
Heat some oil in a large frying pan, or sauté pan.
Add the garlic, and cook for 1 minute, add the celery, peppers and shallots and cook for 2 minutes.
Add the cooked rice, drained tuna, grated carrot, drained corn and parsley.
Mix thoroughly.
Squeeze some lemon juice over rice, season to taste.
