Tzatziki
Ingredients:
1 continental cucumber, grated, with or without skin
Sea salt
3 cloves garlic, crushed
500mls plain greek style yoghurt (the thicker and creamier the better)
1 tablespoons fresh mint or dill, finely chopped
Vinegar or juice of half a lemon
freshly ground black pepper
3 tablespoons olive oil
sprigs of mint or dill, to garnish
Method:
Place the yoghurt in a sieve and drain for a few hours.
This gives a thicker tzatziki.
Mix cucumber with salt and leave for 30 minutes.
Drain cucumber and squeeze well without crushing it.
Mix the yoghurt, cucumber, garlic, mint, vinegar or lemon juice all together, then add the 3 tablespoons of olive oil, enough to make the mixture smooth.
Add salt and pepper to taste.
Garnish with mint or dill.
