Potato Salad

Ingredients:
1 kg potatoes
4 shallots, finely sliced
1 small bunch of mint, finely chopped
150g sour cream
150g mayonnaise

Method:
Peel the potatoes and boil them whole in salted water.
When cooked remove from pan and allow to cool.
When cool, dice them and place them in a bowl.
Add the finely sliced shallots and chopped mint.
Mix together the sour cream and mayonnaise and mix through the potato mixture.
