Cheese Pie
Ingredients:
250g feta cheese, coarsley grated
100g parmesan cheese,finely grated
1 bunch mint, washed and finely chopped.
Bechamel sauce, made with:
2 tablespoons plain flour
125g butter
600 mls milk
2 eggs
Salt and Pepper to taste
Puff Pastry
1 egg beaten with a little milk,to use as an egg wash.
Method:
Prepare the Bechamel sauce first.
Melt the butter in a saucepan.
Add the flour and make a roux.
Gradually add the milk, stirring with a whisk.
When the sauce thickens, cook for a further 3 minutes.
Take off the heat and add beaten eggs, one at a time.
Add salt and pepper to taste.
Add the feta cheese, parmesan cheese and the mint to the sauce.
Roll out the puff pastry ( or you could use ready rolled puff pastry sheets) and line a 7” square pyrex or baking tin.
Fill the pastry with the cheese mixture and top with another sheet of puff pastry.
Brush with egg wash and bake in a moderately hot oven, 190oC (400oF) for about 30 minutes, or until the pastry has risen and become a nice golden brown colour.
