Taramosalata - Virginia’s Mum's Recipe
Ingredients:
1 small onion
2 pieces of bread
1 coffee cup lemon juice
2 cups peanut oil
2 teaspoons vinegar
1 100g tin tarama or 100g
Method:
Grate the onion very finely
Cut the crusts from the bread and soak the bread in the onion juices
Put tarama in the mix master and add the bread and onion.
Mix for a few minutes.
Add vinegar and mix into mixture.
Put mix master on slow speed.
Then add the oil teaspoon by teaspoon.
When you see that the mixture is loose, add the lemon juice.
Taramosalata - Irene’s friend Dora’s Recipe
Ingredients:
½ litre Zena vegetable oil (or any other good quality vegetable oil)
1 small onion
2 french bread rolls
Juice of 1 lemon
100g tin tarama (or 100g fresh tarama)
Method:
Place the bread rolls into some water, when soaked, squeeze and drain
Put the small onion into blender. Add tarama, blend then add the bread mixture.
Then add the oil slowly and then add the lemon juice until it is thick.
You will notice that the blender starts to slow down.
