Greek Potato Salad
Ingredients:
1 kg potatoes, peeled and cut into chunky cubes
Oil and lemon salad dressing
Salt and pepper to taste
Method:
Cook the potato cubes in boiling salted water until just cooked.
While still warm pour the dressing gradually and mix in. You may not need all of the dressing.
Season to taste.
Oil and lemon dressing:
120ml peanut oil
3 tablespoons lemon juice
Salt and pepper
Put all oil and lemon juice in a screwtop jar adding salt and pepper to taste.
Shake well to blend before using.
