Little Cheese Pies (Tiropitakia)

Ingredients:
250gms feta cheese, grated
75gms parmesan cheese, finely grated
1 egg, beaten
1 x 20g bunch fresh mint, finely chopped
1-2 Tablespoons cream, if required
Pepper & Salt to taste
Puff Pastry
Cumin Seeds
Beaten egg and milk for glazing

Method:
Preheat oven to 200 degrees C
Mix together, grated feta cheese, grated parmesan cheese, beaten egg and finely chopped fresh mint.
If this mixture is too dry, add some cream.
Add pepper and salt to taste.
Be careful with the salt, as some feta cheese is already salted.

On a floured board roll out the puff pastry (or you could use ready rolled sheets), cut out rounds with a 7cm pastry cutter.
Moisten edges with water.
Place 1 teaspoon of cheese mixture into middle of each round and fold pastry over mixture to form a crescent.
Seal edges firmly with a fork, (to form lines around the edges).
Brush with egg and milk wash. Sprinkle cumin seeds on top.

Bake for 10-15 minutes in hot oven.
