Spaghetti Marinara

Ingredients:
1 packet of spaghetti
2 tablespoons finely sliced shallots
3 to 4 prawns
1 onion
A handful of mussels
½ lb tomatoes, peeled and chopped ( prick tomatoes and place in boiling water , then when they start to blister, remove skins.)
A handful of mushrooms, finely chopped
Half a teacup of scallops
clove of garlic, crushed
4 tablespoons butter
2 tablespoons chopped parsley
Salt and pepper to taste
Pinch of sugar

Method:
Cook spaghetti as per cooking instructions on packet.
When cooked it should be firm, not brittle.
After you drain the spaghetti either immerse in cold water or wrap in a towel.
Place the mussels in cold water and bring to boil, boil for 4 minutes and as soon as they open, cool then remove the flesh.
Fry onions, shallots and crushed garlic for 3 minutes in 4 tablespoons of butter, add the peeled tomatoes to the frying ingredients.
Add salt and pepper to taste with a pinch of sugar.
Add prawns, mussels, scallops and finely chopped mushrooms to the frying ingredients with two cups of water.
Simmer for half an hour.
Place spaghetti in a big bowl, add sauce and mix.
Sprinkle with chopped parsley.
