Steak Tartare
Ingredients:
1lb lean sirloin or filet steak
1 onion
½ cup chopped shallots
2 tablespoons capers
Black or Worcestershire sauce
1 bunch parsley
1 egg
Salt and pepper to serve
Method:
Cut the steak into thin slices going the same was as the meat’s fibres.
Stack the slices then cut in opposite direction as finely as possible.
Hold knife at both ends and finely chop the meat.
Bring back the chopped meat as if to fold then continue mincing.
Add salt and pepper to taste.
Add the chopped onion, shallots and capers.
Mix all ingredients with the black or Worcestershire sauce.
Shape into a ball, surround with finely minced parsley.
Make a hole, add an egg, salt and pepper to serve.
