Spinach Rice

Ingredients:
2 kg spinach
˝ cup olive oil (or melted butter)
1 small onion, chopped
1 or 2 garlic cloves, finely chopped
1 cup rice
1 cup water
1 cup crushed tomatoes
Salt and pepper to taste

Method:
Remove and discard all stalks from the spinach.
Wash thoroughly with hot water and drain.
Chop finely.
Heat oil in a very large pan and add the onion and garlic and sauté for a few minutes.
Add the spinach and sauté for another few minutes.
Add the rice and cook for a few minutes.
Add the crushed tomatoes, and water. Season to taste.
Bring to the boil, place the lid on the pan and simmer very gently for 20 minutes.

This is nice served with a little grated parmesan – not unlike a risotto.
