Sweet Potato
Scrub and bake in their jacket.
They cook faster than ordinary potatoes, so put them in the oven after you have put the roast potatoes on.
A medium sized sweet potato will take about 30-45 minutes.
When cooked, slice them very thickly and remove their skin.
You can leave them plain to go with the rest of the roast vegetables, dot a little butter on top or if you like a really sweet alternative, you can toss them in butter and brown sugar.
