Brussels Sprouts:
Remove any wilted outer leaves from sprouts, remove hard end of stem; cut a cross in base of stems to ensure even cooking. Wash thoroughly.
Cook in plenty of boiling salted water, with a pinch of bicarbonate of soda and a pinch of sugar added, until tender ( about 8 minutes).
Cook with the lid off.
Drain well, toss in melted butter, sprinkle with pepper
