Buttered Eggs
For 12 people

Ingredients:
150mls bourbon whiskey
2 tablespoons sweet chilli sauce (Socomin)
1 tablespoon tomato sauce/ketchup
600mls King Island cream
250gms unsalted butter
18 eggs
250gms smoked salmon

For Salmon sauce:
Boil chilli sauce with bourbon, when it comes to boil, add cream.
Simmer for 1 hour.
Add salmon and beat into mixture. – don’t worry if it separates, just keep beating.

Eggs:
Melt butter, whisk eggs with some freshly ground pepper and add to melted butter.
Stir egg mixture over a low heat until the mixture becomes thick and lumpy.
Serve eggs with some fresh salmon eggs next to the salmon sauce sprinkled with chopped chives.
