Baba Ganoush
Ingredients:
1 medium aubergine
3 tablespoons lemon juice
2 tablespoons tahini
1 clove garlic, crushed
Sea salt
½ teaspoon ground cumin
Olive oil
Fresh chopped parsley to garnish
Method:
Prick the aubergine all over with a fork then place under a moderate grill, turning frequently until the skin is slightly charred.
Allow to cool.
Cut in half lengthways and scrape out the softened flesh with a spoon.
Chop the flesh finely, put it in a bowl and mix with the lemon juice, tahini, garlic and salt.
Add about ½ teaspoon ground cumin and olive oil to taste (about 1 tablespoon).
You can use a bamix to mix all this together to give you a really smooth dip.
