Sultana Cake
Ingredients:
185g wholemeal flour
185g plain flour
1 teaspoon baking powder
500g sultanas
250g unsalted butter, softened
300g raw sugar
4 eggs
1 tablespoon golden syrup
Method:
Sift wholemeal flour, plain flour and baking powder together.
Boil sultanas in water for 5 minutes.
Drain and leave to cool.
Beat softened butter with sugar, until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Mix in golden syrup. Add all of the flour and mix well.
Fold in sultanas.
Pour mixture into a greased and floured 20cm square tin and bake in a moderate oven for 1 to 1½ hours.
