Melting Moments

Ingredients:

Biscuit:
125g butter, softened
60g icing sugar, sifted
2 teaspoons lemon juice
90g plain flour, sifted
90g self raising flour, sifted

Filling:
30g butter, softened
90g icing sugar, sifted
1 teaspoon lemon juice

To finish:
60g plain chocolate

Method:

Biscuits:
Beat the butter and sugar together until light and fluffy.
Stir in the lemon juice and flours. Mix to a fairly stiff dough.
Place the mixture in a piping bag fitted with a 1cm fluted nozzle and pipe
6cm lengths onto greased baking sheets, spacing well apart.
Bake in a moderately hot oven for 10 to 15 minutes until golden brown.
Cool on a wire rack.

Filling:
Beat the butter and sugar together until light and fluffy and stir in the lemon juice.
Sandwich the biscuits together in pairs with the filling.

To finish:
Melt the chocolate in a bowl over hot water, and dip both ends of the biscuits into the chocolate.
Leave on a wire rack until the chocolate is firm.
