Bananes Flambees
Ingredients:
125g unsalted butter
125g brown sugar
2 tablespoons sherry
2 tablespoons lemon juice or lime juice
16 small or 8 large bananas, slightly under ripe
1/3rd cup brandy
Ice cream
Cinnamon
Method:
Melt butter in a deep frypan, add sugar, sherry and lemon or lime juice and stir over low heat until sugar has dissolved.
Peel bananas and add to syrup and cook on both sides until golden.
Transfer to hot chafing dish and keep warm ( or place in a shallow greased casserole in slow oven).
To serve pour over warmed brandy and ignite, and serve with ice cream dusted with cinnamon.
