Chocolate Mousse
Ingredients:
125g dark chocolate, chopped
5 eggs, separated
2 tablespoons Grand Marnier
Lemon juice
90g caster sugar
½ pint cream, stiffly whipped
Extra cream and grated orange rind to garnish
Method:
Melt chocolate over hot, not boiling water ( or in the microwave).
Remove from heat and beat in the egg yolks, Grand Marnier and lemon juice gradually.
Beat egg whites stiffly and gradually add the sugar.
Carefully fold the whipped cream and chocolate mixture into egg whites.
Place in serving dish or individual dishes and refrigerate overnight.
Decorate with extra whipped cream and a little grated orange rind before serving.
