Masons Spicy Apple Cake
Ingredients:
2 cups coarsely chopped apple
1 ¾ cup sugar
250g melted butter
2 eggs, lightly beaten
2 ½ cups plain flour
1 teaspoon mixed spice
1 teaspoon baking powder
1 cup walnuts
1 cup raisins
Method:
Chop/peel apples and add sugar.
Pour over melted butter and add lightly beaten eggs.
Sift dry ingredients together and add to mixture.
Mix in nuts and raisins.
Pour into a greased and floured 20cm round cake tin and cook in a moderate oven for 1 – 1 ½ hours.
When cool, dust with icing sugar.
