Fruites Glace
Ingredients:
3 cups sugar
1 cup water
1 tablespoon glucose
pinch vanilla
Method:
Place the sugar, water, glucose and vanilla into a saucepan and boil until the sugar has dissolved. Once dissolved cook for a further 1 minute.
For the fillings:
Walnuts with masticha jam
Prunes with roasted almonds
Dates – boil the dates with some butter and water until soft. Cool.
Place some almonds in the middle
Apricots
Glace cherries – green and red
