Dark Chocolate Cheesecake

Ingredients:
Crumb Crust:
150g plain chocolate biscuits
¼ teaspoon cinnamon
60g butter
Filling and Topping
150g dark chocolate
450g cream cheese
¾ cup sugar
2 eggs
1 dessertspoon cocoa
1 teaspoon vanilla essence
1 cup sour cream
150ml cream
Grated chocolate
Maraschino cherries

Method:

Crumb Crust:
Crush biscuits.
Combine crushed biscuits, cinnamon, and melted butter in bowl.
Press mixture on to base of greased 20cm spring form tin. Refrigerate until set.
Note: if using plain sweet biscuits in place of chocolate biscuits, omit 15g butter add 30g melted dark chocolate.

Filling:
Melt chopped chocolate in top of double saucepan.
Cream together cream cheese and sugar until smooth and fluffy.
Add eggs, one at a time, beating well after each addition.
Add cocoa, vanilla, and sour cream, beat well.
Pour cheese mixture on to crumb crust.
Stand pan on oven tray.
Bake in slow oven for 1 hour 10 minutes.
The cake may still be moist in centre, but will set as it cools.
Turn off oven heat with the door slightly ajar, then refrigerate.
To serve, decorate with whipped cream, grated chocolate and cherries.
