Mum’s 123 Cake

Ingredients:
4 eggs
2 cups sugar
250g unsalted butter
Grated rind of one orange
¼ teaspoon vanillin sugar
3 cups Self Raising flour, sifted
½ teaspoon baking powder
1 cup milk
2 tablespoons cocoa
1 tablespoon drinking chocolate
1 extra tablespoon milk

Method:
Sift the self raising flour with the baking powder.
Grease and flour, one kugelhopf tin and one loaf tin.
Beat eggs and sugar together until light and fluffy. (approx.15minutes).
Add softened butter, grated orange rind and vanilla.
Mix in well.
Add 1/3
rd of the flour and 1/3rd of the milk and beat for a few minutes.
Add the flour and milk in two more batches.
Pour two thirds of cake mixture between the kugelhopf and loaf tin (each should be half full).
To the remaining cake mixture, add cocoa, drinking chocolate and extra milk. Beat well.
Share this mixture between the two tins.
Add spoonfuls on top of white mixture.
Cut through with knife or teaspoon to give swirl pattern.
Cook in a moderate oven for 45-55 minutes.
Check at 45 minutes if blade comes out dry, if not cook for a further 10 minutes.
