Scones – White Wings famous scones
Ingredients:
2 cups White Wings self raising flour
¼ teaspoon salt
3 teaspoons icing sugar
1 ½ tablespoons butter
¾ cup milk
Method:
Preheat oven 250oC/475oF.
Sift flour, salt and icing sugar in a bowl.
Rub in butter with fingertips until mixture resembles fine breadcrumbs.
Mix lightly to a soft dough with milk and knead gently on a floured surface.
Pat out dough to 2 cm thick .
Cut out with a floured 5cm cutter.
Sift a little flour over tops of scones and place onto a greased tray, close together, but not touching.
Bake for 12-15 minutes.
Remove from tray to wire cake cooler.
If you prefer scones with firm, crisp top, let them stand, uncovered, on wire tray.
If you prefer soft scones, wrap them, as soon as they come out of the oven, in a clean tea towel; the trapped steam will soften the crisp top.
