Semolina Cake ( Halvas Tis Fotias)
This cake is cooked on top of the stove in a saucepan
Ingredients:
250g unsalted butter
2 cups semolina
1 tablespoon cinnamon
1 cup chopped nuts (walnuts/almonds or pine nuts)
Milk Syrup:
4 cups milk
3 cups sugar
2 tablespoons honey
8 whole cloves
1 cinnamon stick.
Method:
Prepare the milk syrup first – Boil milk, sugar, honey, cloves and cinnamon stick together, until sugar dissolves.
Melt butter in a large saucepan, stir in semolina.
Cook for a few minutes until semolina starts to change colour.
Add the nuts and cinnamon. Mix well.
Add the milk syrup and stir well.
Cover and simmer for about 10 minutes.
The mixture will start to thicken as it absorbs the milk mixture.
Cover and simmer for a further 10 – 20 minutes, stirring mixture once or twice during this time.
You will know when it has finished cooking when the mixture is no longer sticky.
You can take a small spoonful and test by rolling into a small ball. If it rolls easily and does not stick to your hand it will be ready to put into the cake tin.
Take a kugelhopf tin and wet it inside.
Start spooning the cake mixture into the tin, pushing it down very firmly.
When all of the mixture has been placed into the tin, turn the tin upside down and place it on a serving plate.
