Eva’s Mothers Chocolate Walnut Cake
Ingredients:
7 eggs
7 heaped tablespoons sugar
6 oz ground walnuts
1 heaped tablespoon cocoa powder
2 tablespoons self raising flour
Method:
Separate eggs.
Mix egg yolks with sugar and beat until light and fluffy.
When mixed add ground walnuts and cocoa powder.
Fold in sifted flour. Beat egg whites until stiff and fold into mixture.
Pour into an 20cm greased and floured cake pan and cook for ¾ hour in moderate oven .
Allow to cool before turning out.
When thoroughly cold cut the cake into three.
Fill with chocolate cream.
Chocolate Cream:
Ingredients:
250g dark chocolate
2 egg yolks
125 g unsalted butter
¼ strong coffee
½ cup icing sugar
90g ground walnuts
1 tablespoon brandy
Melt the chocolate with the coffee in a bowl over a pan of hot water.
Remove from heat.
When slightly cooled, add egg yolks one at a time, beating well after each addition.
Mix in icing sugar until smooth.
Mix in walnuts.
Stir in brandy.
