Irene’s Spice Cake with Banana Frosting

Ingredients:
2 cups sifted plain flour
¼ teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
½ teaspoon ground nutmeg
½ cup shortening
2 cups brown sugar
3 eggs, separated
1 cup thick sour cream


Method:
Sift four, salt, baking soda and spices together, 3 times.
Cream shortening with sugar until light and fluffy.
Add egg yolks and beat thoroughly.
Add sifted dry ingredients and cream, alternately, in small amounts, beating well after each addition.
Beat egg whites until stiff but not dry and fold into batter.
Pour into greased 23cm cake pan and bake in a moderate oven, for 50 minutes.
When cool, cover with Banana Frosting.


Banana Frosting:

Ingredients:
½ cup mashed bananas ( 2 large)
½ teaspoon lemon juice
¼ cup butter
3 ½ cups icing sugar, sifted.

Method:
Mix banana and lemon juice together.
Cream butter with 1 cup sugar, then add banana and enough of remaining sugar to make mixture thick enough to spread.
