Carrot Cake

Ingredients:
3 cups grated carrot
1 cup raw sugar
1 cup oil
4 eggs
2 cups SR flour
1 teaspoon bicarb. of soda
1 teaspoon salt
1 cup walnuts

Method:
Place all ingredients, except walnuts, into a large mixing bowl and beat together for 3 to 5 minutes.
Fold in walnuts.
Pour mixture into a large baking pan (lasagne dish size) and cook in a moderate oven for 35 to 40 minutes.
When cool cover with topping.

Topping:
Ingredients:
¼ lb cream cheese
1 cup icing sugar
lemon juice

Method:
Beat all ingredients together until smooth.
