Cream Cheese Bars
Ingredients:5 tablespoons butter
1/3rd cup brown sugar
1 cup flour
¼ cup chopped nuts
½ cup caster sugar
250g cream cheese, softened
1 egg
2 tablespoons milk
1 tablespoons lemon juice
½ teaspoon vanilla
Method:
Cream butter and brown sugar.
Add the flour and nuts and mix well.
Set aside 1 cup of this mixture for the topping and press the remainder of the mixture in an 20cm x 20cm pan.
Bake in moderate oven for 15 minutes.
Blend caster sugar and cream cheese until smooth.
Add the egg, milk, lemon juice and vanilla.
Beat well and spread over baked crust.
Sprinkle with topping and bake an additional 25 minutes.
Cool, chill and cut into small squares.
