Cherry Slice
Ingredients:
185 g Cadbury dairy milk chocolate
2 cups desiccated coconut
1 cup caster sugar
3 eggs
125g glace cherries chopped
Icing sugar for dusting
Method:
Chop chocolate roughly. Place in top of double saucepan over hot water; heat gently, stirring, until melted and smooth.
Spread chocolate over base of well greased 28cm x 18cm lamington tin lined with greased aluminium foil.
Refrigerate until firm.
Beat together eggs and sugar until light and frothy; gently fold in coconut and glace cherries.
Spread over firm chocolate.
Bake in moderate oven, for 30 minutes until topping is firm to touch.
Cool and refrigerate. Before serving, sprinkle with sifted icing sugar, cut into small fingers.
