Koulourakia
Ingredients:
250g butter
1 ¼ cup sugar
4 eggs, separated
¼ teaspoon masticha
1 liqueur glass cognac
¼ teaspoon vanillin powder
750g Self Raising Flour
Beaten egg, for glazing
Method:
Beat butter and sugar together until light and fluffy.
Add cognac, masticha and vanilla. Mix well.
Add egg yolks, one at a time, beating well after each addition.
Gradually add the sifted flour.
Fold in the egg whites. Pastry should be pliable. If too soft, add some extra flour.
Shape into rounds, circles and/or small plaits.
Baste with beaten egg.
Add sesame seeds if desired.
Place on greased oven slides and bake in a moderate oven until golden brown.
